Most users will use the Home Edition of vista.
Pro version offers more components. Like Media Center.
Ultimate has everything MS has to offer for windows. Including Extras and Upgrades.
The x86 (32 Bit) is for 32 bit cpu's (and motherboards, etc...)
The x64 (64-Bit)is for 64 bit systems. You can Google your computer/motherboard to see what type it's running. Mostly if you have a ePCI slot, you have a 64 bit system. You can run a 32bit windows on a 64-bit system, but you cannot run a 64 bit windows on a 32 bit system.
I recommend getting Vista Pro (Ultimate if your a fanatic, Home if you're a light user). Be sure you check the system requirements!
For Vista, there's home basic, home premium, and ultimate.
